Hello Friends,

This week I prepare to head off to the northwest for work. Of course I have a list of new shops I will try and hit while I’m up there as well. Hopefully some new coffees to bring home to share with all of you. Come on by and get some coffee before I am closed down for the next couple weeks. I will be serving Ecco Caffe’s Finca Malacara Espresso. Beautiful acidity and caramel sweetness.

Also, welcome back PUC students, it has been a long lonely summer. We are glad you are back.

Well Update – We are up to $800! We will be having a kick-off party in Calistoga on the weekend of October 10, stay tuned for more details.

Incognito Week of 9-20

Author: IncognitoScott | Filed under: Uncategorized

Hello Friends,

Due to a busy week ahead, I will only be able to open on Monday. I will be serving the El Tambor from Guatamala. This coffee has the most velvety body of any espresso I have ever tried. It is beautiful. A great show piece for what “body” is in coffee. Come on by and enjoy. You can also try to console me on the destruction of my Cincinnati Bengals in week 1 of the NFL.

Incognito Week of 9-13

Author: IncognitoScott | Filed under: Uncategorized

Hello Friends,

Last Friday I got the opportunity to meet one of my heroes in the coffee world, Aida Batlle. She owns three farms in El Salvador and she is the superstar of superstar coffee producers. I heard about all of the experiments she is running on her farm to improve the taste of her coffees. I also got to taste the results of some of said experiments. She has been able to reproduce flavors in her coffee that were thought to have been inherent to the place it was grown. In coffees from her farm I tasted coffees that had profiles of Ethiopia, Burundi, Kenya and El Salvador. It was truly an eye opening experience. I will bring her coffees to the window when they become available.

This week I will be bringing you a single origin espresso from Guatemala. The El Tambor has gorgeous flavors of pear and peach. I’m looking forward to sharing it with you.

WELL UPDATE – The fund is up to $600 and we are gearing up to launch the website in October. Stay tuned.
