Hello Friends,

It was a real pleasure to see so many of you come out to try the liquid S’mores on Friday. I had a great time serving it to all of you. Here is a picture of it, in case you missed it twitpic.com/52wakj

This week I will return to my roots and serve up some lovely traditional espresso drinks. I will be serving Verve Coffee’s Streetlevel espresso. It has a beautiful balance of almond chocolate and citrus. Try your drinks in porcelain if you have time. I feel like porcelain cups really do make a huge difference in the level enjoyment you receive from a cup of coffee. Not only because of it’s ability to stabilize the temperature, but it mentally forces you to slow down and concentrate on the flavors swirling around in the cup.

Also, for those of you are interested I will be holding a public coffee tasting tomorrow (Monday) at 11 am. This is for people who are really into pure coffee. A coffee tasting is done by pouring hot water into a cup that is filled with ground coffee. This is allowed to sit for a few minutes, and then using a special silver plated spoon, your slurp the coffee into your mouth. It is the best way to really get an idea of the amazingly varied flavors that can be found in coffee. PLEASE EMAIL ME IF YOU ARE INTERESTED. I am limiting this to the first 4 people that email me.

Incognito Week of 5-30

Hello Friends,

A little over a year ago I created a drink called Crush that experimented with the flavors of grape infused with smoke. It was a very theoretical drink that taught me quite a few things about how flavors mix with espresso. Now it is time to take the theoretical and apply it to something familiar. Over the last year I have been trying to find a way to reintroduce the concept of captured smoke into a drink that people will recognize as comfort food.

This weeks barista special will be my impression of a S’mores (an ultimate comfort food) Only this will be a liquid S’mores. First a chocolate ganache that is added to the bottom of a Gibraltar glass. A shot of espresso pulled over top. Then a graham cracker infused cream, steamed and incorporated. Topped with a marshmellow whipped cream and a small sprinkle of crushed graham crackers. This concoction will be presented under an oak smoke filled glass to complete the experience. Should be interesting…

IMPORTANT!! I will only be serving this drink from 7:30 am – 8:00 am on Friday in order to keep things moving smoothly. So if you want to try it please come early!

Incognito Week 5-23

Hello Friends,

This week I am excited to bring to you a new coffee from Coava Coffee Roasters in Portland. They procured the 2nd place winner from the Taste of the Harvest Ethiopia contest. It is a natural Ethiopia that I am told is extremely clean while maintaining the beautiful notes of berries and melon that can come from a great Ethiopian coffee. Every year I search out a coffee that matches this description.

The coffee is from Kilenso Mokonissa. Coava had their importer separate out this lot that usually gets mixed in with other farms in a cooperative. We are losing many of our unique coffee experiences due to the economic benefits of cooperatives. It assures farmers of being able to sell their crop, but it also usually means that the coffee will be mediocre as the truly special coffees are mixed in with mediocre beans. The opportunity to taste an Ethiopian coffee of this calibre is getting more rare every year.

I will be serving this coffee on Friday, I would encourage people to get straight shots and short milk drinks to truly appreciate the flavors in this coffee.

Incognito Week of 5-9

Hello Friends,

In a little town set on the coast of Sicily lies an orchard shared by orange and almond trees. The morning ocean breeze brings the scent of citrus blossoms, almond blossoms to a nearby cafe where it mixes with the espresso being ground and pulled by a barista. Old men sit at tables and eat marzipan filled pastries with their shot of espresso and catch up on the latest gossip competing with the buzz of the bees hurrying to ride the wave of scent to the orchard.

This past week I was reading about the culinary delights that are found on the island of Sicily, a magical island full of bold flavors. Tomorrow I will bring you a new special that captures this scene. It starts off with a shot of Spring Break espresso from Ritual that imparts citrus, almond and chocolate notes. Then an almond milk made with blended marzipan is steamed and combined with the shot. To top off the drink a dollop of orange blossom honey whipped cream and a dash of cinnamon for aromatics. This drink will be served in porcelain only and will be limited to the amount of almond milk that I can make. Come early to make sure you get to try it!
