Hello Friends,

Incognito Week of 11-22

Hello Friends,

Over the past few weeks I have been watching my little garden die out. I have always loved fall, but seeing the bounty of nature disappear has been sad this year. Just this weekend I have been noticing that my meyer lemons are turning all yellow. That means citrus is coming in season and will comfort my sadness over the loss of tomatoes and basil.

To celebrate the lemons, I will be bringing back the Macchiato Romano made with meyer lemons from the backyard. Come by on Friday to enjoy the new bounty of the cold season. On Monday I will be offering up pour-over and espresso of the Ethiopia Worka. A great chance to taste what the different brewing methods will do to the coffee.

Incognito Week of 11-15

Hello Friends,

A busy week in the Enrollment office at PUC. This week I will be serving pour-over coffee with a new invention in the coffee world. A friend of mine who use to work for Ecco Caffe has been working on a metal filter for brewing coffee. They just released it last week and I was able to get one of the first ones. It bridges the difference between pour-over and french press. Pour-over used to be very high noted and light bodied because the paper filters would pull out some of the coffee oils. The KONE from Coava Coffee allows a quick immersion while maintaining all of the oils. It makes a delicious cup. On Wednesday I will be serving a coffee from Elida Estate in Panama, one of my favorite farms. It has beautiful acidity and fruit. On Friday I will have one of the very few naturals from Ethiopia being sold this year, the Worka Natural Sundried from Counter Culture. It will be a great week for drip coffee lovers.

Incognito Week of 11-1

Hello Friends,

A rainy day spent in the espresso lab has resulted in a new drink. Recently I have been tossing a lemon peel in with my morning espresso in the tradition of the Romans. I love the little extra zing it adds to the drink. It is my favorite thing about Italian culture. From place to place, things that are common are done just a little bit different. And of course each Italian feels like their tiny change in the dish makes it the best.

This week I would like to present to you the Macchiato Romano. It is a shot of a lemony espresso with a steamed lemon peel and vanilla bean infused cream. It is served in a lemon sugar rimmed cup for a little extra zing and sweetness. I think you will agree the Romans are on to something here.

Incognito Week of 10-18

Hello Friends,

I was a fantastic day at the kitchen window today. Many of you came out to support the beginning of the charity:water campaign. I am proud to announce that we raised $316 today! Thanks so much to Ashley Reynolds for giving up her birthday for this cause.

This week I will bring you the last of my stock of Amano chocolate. Tomorrow morning I will be serving the Mocha until I run out of my chocolate ganache. First come first serve! I will also be serving delightful drinks made from Ecco’s El Tambor espresso. This coffee has worked it’s way into my heart. It is sweet without being acidic. It is spicy without being bitter, and it has the consistency of heavy cream. Beautiful stuff.

WELL UPDATE: The website is up at mycharitywater.com/incognito I will be making the first two donations as soon as I can. When I attempted today, the credit card system seemed to be down. We are now at $1,316, so $3,684 to go.

Incognito Week of 10-11

Hello Friends,

I will be open on Sunday to kick off the charity:water campaign. I will be launching the charity:water incognito site on Sunday so that anyone can make donations to the cause. If you have not yet read about charity:water and what they are doing you can visit charitywater.org

Ashley Reynolds has “donated” her birthday to the cause as well.

We will be serving coffee and lemonade for this very special opening of Incognito Espresso. In lieu of any gifts, please come and give a donation for your drink to charity:water on behalf of Ashley.

Incognito Special Sunday Edition

Hello Friends,

It’s good to be home after a couple weeks traveling in the Northwest. I did get to visit a new shop in Portland that is doing great things. The shop is called Coava and one of the partners has invented a new filter for drip coffee that is made from metal. This will save tons of paper filters, and after trying the coffee I can honestly say that I think it helps improve the taste. My initial theory is that more essential oils are getting into the cup that usually get caught by the filter. It makes for a delicious cup, and one that produces less waste. I will be trying to bring the filter to the window when it is available.

For now, I have brought home some of Coava’s espresso Guatamala Xeucalvitz. It has a beautiful brown sugar sweetness with some lovely rose notes. It is a higher noted coffee for those who like brightness. Come by tomorrow for a chance to taste some of Portland’s finest.

WELL UPDATE – It is time to kick off the clean water campaign in full force. This coming Sunday I will launch the incognito clean water website. I will make the initial donation, and then open it up for everyone. I will be open on Sunday from 10 am – 1 pm to help start things off. Ashley Reynolds has decided to donate her birthday to the cause. She will be at the window serving some homemade lemonade, and I will be serving some hot and cold coffee drinks. There will be a computer available for anyone wanting to make a donation. I will give you more info later in the week. Looking forward to getting this campaign going for real!

Incognito Week of 10-4

Hello Friends,

This week I prepare to head off to the northwest for work. Of course I have a list of new shops I will try and hit while I’m up there as well. Hopefully some new coffees to bring home to share with all of you. Come on by and get some coffee before I am closed down for the next couple weeks. I will be serving Ecco Caffe’s Finca Malacara Espresso. Beautiful acidity and caramel sweetness.

Also, welcome back PUC students, it has been a long lonely summer. We are glad you are back.
